Goat Milk Whey Lacto-fermented Lemonade

1 cup goat kefir whey
3/4 cup sugar
1-1/2 cups fresh squeezed lemon juice (about 10-14 lemons)
Water (at room temperature) to make a total of one gallon of lemonade
Optional: 1" fresh ginger sliced thin or grated
Optional: If you want flavored lemonade, add 1 cup of juice of your choice such as 100% raspberry juice or 100% pomegranate juice

After you make your goat milk kefir, use 1 cup of the whey to make this recipe.

Mix all together in a one gallon jar. Cover with a coffee filter and rubber band. Let set for two days. Stir each morning and night. After two days, pour into 16 ounce EZ cap bottles no more than 1/4" to 1/2" from the top. Set on a tray and cover with a bath towel. After 24 hours put in refrigerator. When it's cold, it's ready to drink.

This delicious, refreshing drink is loaded with probiotics.
